A Garden Pizza
A couple of weeks ago we went to a birthday party where we had to bring a homemade pizza to share. It was a fabulous idea.
One individual brought a vegie pizza that was absolutely delicious. It inspired me to create my own version with vegies from our garden. The recipe is as follows:
Ingredients:
Pizza dough
Fresh herbs-Rosemary, Basil, Thyme and Oregano
Olive Oil
Garlic
1 cup Parmesan cheese
3 Juicy tomatoes
1 cup Marinara sauce
Fresh cut vegies of your choice. I used..
Zucchini
Orange and green tomatoes
Banana Pepper
Red Onion
Green Pepper
Scallions
3 cups Mozzarella Cheese
Bacon
Directions:
Roll out pizza dough onto pan and brush with olive oil. Sprinkle dough with fresh herbs, garlic and Parmesan cheese. Bake at 350 for 10 minutes.
Finely chop 3 tomatoes and mash slightly with a fork. Add 1 cup of marinara sauce to the chopped tomatoes and mix well. Spread sauce over pizza dough.
Sprinkle a thin layer of Mozzarella cheese over sauce, reserving remaining cheese for the top.
Thinly slice fresh, garden vegetables and layer on pizza, reserving the scallions. Sprinkle bacon (if desired. Chicken would be good too) Sprinkle remaining cheese and top with scallions.
Bake at 350 until cheese is golden brown.
