Here is one of the many things I have been up to the last couple of weeks; Freezer Meals. My friend Kelly and I got together one evening and spent about 3 hours assembling lasagnas. After preparing the ingredients most of the day, our evening consisted of layering lasagna after lasagna. We made the traditional meat and marinara and also tried a new recipe for a chicken cordon bleu lasagna. By the end of the night we had 14 lasagnas!!!
Kelly has three little girls and is working hard at getting her new Strides Therapy clinic established. I just like having food for my hubby to eat while I am in Iowa City working and for those lazy days that I don't feel like cooking. It will also be nice when the baby is born or when others have babies or are under the weather. I plan on spending another available day making a few more recipes that freeze well.
