Pantry Challenge | Week Four

The Pantry Challenge has come to a close!! Four weeks of using only what I had in my pantry and deep freezer, was full of creativity, resourcefulness and adventure.
Week four started with...

Indian Curry Beef over Brown Rice
Steamed Peas
Apple Sauce


Zesty Southwestern Breakfast Pie (now one of Aaron's favorite meals!)
Clementines 
Spaghetti Sauce and Meat over Spaghetti Squash instead of noodles
Apple Sauce

Stromboli (see previous post!)

Zesty Short Ribs
Sweet Potato Fries
Broccoli and Rice

and of course, Leftovers!!

And what you have all been waiting for (duh duh duh), January's Grocery Bill...

I'm not sure if I am impressed with that or not. In my mind, it is still too much, but if I consider that we are a family of three and that our fresh produce is usually organic along with Easton's milk; maybe it's reasonable. ???
Our grocery list consisted of milk, eggs, bananas, apples and fresh spinach. I have learned in the last four weeks, that we drink a LOT more milk than I realized!
I must say that I am quite excited to go grocery shopping TOMORROW!! I won't be stocking up, but will continue to use what I have in my pantry and freezer and shop for those little missing ingredients.
I had someone say that if January's grocery bill was next to nothing, then February's grocery bill will be really high. My response:
1) A well thought out menu (more on that later)
 2) Continue to use the items I have.
3) Don't buy unnecessary items just because they sound good or you are craving them.

My challenge to you.. Get creative and make one meal with only ingredients you already have in your kitchen.
